Yosemite Sammies

Ingredients:

1 Rotisserie chicken, boned and cut into small pieces
1/2 C mayonaise
1/2 C finely chopped fennel bulb
1/4 C finely chopped green onion
1/4 C chopped fresh basil
1/2 tsp garlic powder
salt and pepper to taste
Additional ingredients if desired:
1/4 C chopped sun-dried tomatoes
1/2 C pine nuts

Focaccia bread, Ciabatta bread or any other bread

  1. Mix chicken and desired ingredients together. Spread onto sliced bread and cut in half. Wrap and refrigerate.
