Wine Jelly

Ingredients:

4 C wine (or a combination of grape juice and wine)
Juice from 1 lemon
1/2 tsp salt
1 box pectin (1.75-2 oz box)
4 1/2 C sugar

  1. Combine all ingredients except sugar in a large heavy pan. Bring to a slow boil, stirring frequently. Add sugar all at once and stir well. Return to full rolling boil. Boil for 1 minute with a constant stirring motion. Turn off heat.
  2. Ladle jelly into sterilized 1/2 pint jelly jars. Process in hot water bath for 5 minutes.
  3. Makes 5 1/2 pint jars.
