Tuscan White Beans
1 lb. dried cannellini beans
1 onion, chopped
2 garlic cloves, sliced
1 carrot , chopped
1 celery stalk, chopped
1 bay leaf
1 tsp dried sage or 6-8 fresh sage leaves
3 Tbsp olive oil
- Soak beans overnight in cold water. Drain and place in large pan. Cover with cold water. Bring to a boil.
- Add the rest of ingredients and lower heat to a simmer. Cook uncovered for 1 to 1 1/2 hours until beans are tender. Add water as needed to keep beans covered in water.
- Add salt and a drizzle of olive oil. Serve warm.
