3 egg whites, room temperature
1 lb powdered sugar
1/8 tsp cream of tartar
- Mix egg whites with sugar and cream of tartar in the bowl of a stand mixer until blended.
- Turn to high speed and mix for 6 minutes until glossy white, thick and icing holds a peak.
- Use right away. If frosting becomes hard to handle add a tsp or two of water to make more workable.
