Pumpkin Pan-A-Cakes

Ingredients:

1 1/2 C flour
1 Tbsp sugar
1 tsp baking powder
1 tsp baking soda
1 tsp pumpkin pie spice
1/4 tsp salt
1 C nonfat milk
1/2 C canned pumpkin
1 egg
1 Tbsp oil

  1. In a bowl mix the dry ingredients. In another bowl mix the wet ingredients together and then combine with dry just until moistened.
  2. Heat an oiled griddle over medium heat and cook 1/4 C portions of batter. When bubbles form on top, turn and cook other side.
  3. Pecans or berries may be added after pouring batter on griddle if desired. Serve with butter and syrup.
