1 C chopped assorted peppers (red, green, yellow and orange bell or mini) for Gringo Green or 2 C for Red Alert Red
1/4 C for Gringo Green or 1/2 C for Red Alert Red hot green jalapeno pepper
1 1/2 C apple cider vinegar
1 box dry pectin (1.75 to 2 oz.)
4 drops food coloring, red or green
5 C sugar
6-8 1/2 pint jelly jars
- Mince peppers or chop in a food processor to a fine chop.
- Combine peppers, vinegar and pectin in a large tall sided pot and heat until liquid is ready to boil. Add food coloring to desired color.
- Bring to a rolling boil.
- Add sugar all at once.
- Boil for one minute, stirring.
- Pour into sterilized jars and seal or put into hot water bath for 10 minutes.
