Onion Jam

Ingredients:

5-6 large red onions, preferably from farmer’s market
3/4 C brown sugar or 1/2 C honey
2 C red wine
1/3 C balsamic vinegar
3/4 tsp salt

  1. Slice the onions very thin.
  2. Put in a large heavy pot and cover with the sugar or honey.  Bring to a medium heat and cook off the liquid in the onions.  This will take about 20-30 minutes.  When the onions begin to caramelize stir frequently until most of the liquid is gone.
  3. Add the rest of the ingredients and simmer until liquid begins to thicken.
  4. Add salt as needed to taste.
  5. Can if desired.
