Ingredients:
5-6 large red onions, preferably from farmer’s market
3/4 C brown sugar or 1/2 C honey
2 C red wine
1/3 C balsamic vinegar
3/4 tsp salt
- Slice the onions very thin.
- Put in a large heavy pot and cover with the sugar or honey. Bring to a medium heat and cook off the liquid in the onions. This will take about 20-30 minutes. When the onions begin to caramelize stir frequently until most of the liquid is gone.
- Add the rest of the ingredients and simmer until liquid begins to thicken.
- Add salt as needed to taste.
- Can if desired.
