Ingredients:
1 lb ground turkey
1/2 C tomato sauce
1/2 tsp salt and pepper
1/2 tsp ground cumin
1/2 tsp ground oregano (preferably Mexican)
2 cloves garlic minced
1/2 C salsa
1 head leaf lettuce, washed and chopped
2 ears corn, cooked and cut from cob
1 C black beans, drained
1/2 C sliced black olives
1 C crumbled queso cheese
1 large avocado, diced
4 green onions, sliced
1 C grape tomatoes halved
1/4 C chopped cilantro
- Cook meat until pink is gone, drain off any liquid. Add tomato sauce, salt and pepper, seasonings, garlic and salsa. Cook for 5 minutes to heat and combine.
- Combine all salad ingredients in large bowl, except for chips. Add meat mixture. Toss together.
Dressing:
1/4 C mayo
1/4 C half and half
1/4 C sour cream
1 lime, juiced
1-2 chipotle chilies (depending on desired heat)
1/4 C cilantro, minced
- Combine all ingredients in blender, food processor or whisk together until creamy.
- Serve alongside or mix into taco salad.
