Lemon Thyme Bars

1 C flour
1 stick butter
1/4 C powdered sugar
1 C sugar
2 tsp lemon zest
2 Tbsp lemon juice
2 Tbsp limoncello (or additional lemon juice)
2 Tbsp fresh thyme leaves, preferably lemon thyme
1/2 tsp baking powder
1/2 tsp salt
2 eggs

  1. Mix flour, butter and powdered sugar together with a pastry blender into small crumble. Press into bottom of a 8 X 8 inch ungreased pan. Bake at 350 degrees for 20 minutes.
  2. Beat remaining ingredients together until light and fluffy. Pour over hot crust.
  3. Bake for 25 minutes until set and lightly brown.
  4. Cut into bars.
