1 C flour
1 stick butter
1/4 C powdered sugar
1 C sugar
2 tsp lemon zest
2 Tbsp lemon juice
2 Tbsp limoncello (or additional lemon juice)
2 Tbsp fresh thyme leaves, preferably lemon thyme
1/2 tsp baking powder
1/2 tsp salt
- Mix flour, butter and powdered sugar together with a pastry blender into small crumble. Press into bottom of a 8 X 8 inch ungreased pan. Bake at 350 degrees for 20 minutes.
- Beat remaining ingredients together until light and fluffy. Pour over hot crust.
- Bake for 25 minutes until set and lightly brown.
- Cut into bars.
