Lemon Curd

Ingredients:

3 eggs
1 C sugar
3/4 C fresh squeezed lemon juice
1/4 C melted butter
1 Tbsp grated lemon peel
1/4 tsp salt

  1. Mix together all ingredients and place in the top of a double boiler with the water in the bottom just simmering.
  2. Cook over simmering water, stirring occasionally, for about 15 minutes until mixture thickens and turns shiny.
  3. Remove from heat and pour into sterilized jars.
  4. If you want to seal and preserve place the jars in a canner with hot water to cover the jars and process for 10 minutes.
