1 C sugar
3/4 C fresh squeezed lemon juice
1/4 C melted butter
1 Tbsp grated lemon peel
1/4 tsp salt
- Mix together all ingredients and place in the top of a double boiler with the water in the bottom just simmering.
- Cook over simmering water, stirring occasionally, for about 15 minutes until mixture thickens and turns shiny.
- Remove from heat and pour into sterilized jars.
- If you want to seal and preserve place the jars in a canner with hot water to cover the jars and process for 10 minutes.
