1 stick butter
1 1/4 C sugar
2 Tbsp lemon juice
1 Tbsp half and half
1 tsp vanilla
3 C flour
2 tsp baking powder
1/2 tsp salt
1/4 C sugar to press
- Cream butter and sugar until light yellow. Beat in egg. Add lemon juice, half and half and vanilla.
- Sift together flour, baking powder and salt. Mix dry ingredients into the butter mixture and blend well.
- Drop by 1 inch scoops or form into 1 inch balls and place 3 inches apart on greased cookie sheet. Flatten with a glass dipped in sugar.
- Bake 10 minutes at 350º until golden on edges.
