1 1/2 lb white fish such as tilipia
2 cloves garlic, minced
1/2 tsp kosher salt
1/4 tsp red pepper flakes, crushed
1 lime cut in half
1/2 C pepper jelly
1/4 C fresh basil, minced
- Sprinkle garlic, salt and pepper flakes over fish filets. Squeeze 1/2 of lime over seasoned fish. Let set 10 minutes.
- Heat jelly and juice from remaining 1/2 lime in microwave for about 30 seconds. Stir in basil.
- Heat grill to medium and grill fish for about 3 minutes. Turn over, baste with jelly glaze and finish cooking.
- Serves 4.
