Gingerbread with Cream

Ingredients:

1/2 C butter
2/3 C hot water
1/2 cup molasses
1 egg
1/2 C brown sugar
3 C flour
1 1/2 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg

  1. Preheat oven to 350 degrees. Grease a 9 inch by 9 inch pan or 5-6 mini Bundt pans. Melt butter in hot water. Add molasses to melted butter water. Stir in egg.
  2. Mix flour, baking soda, salt and spices. Gently mix in wet ingredients. Pour into prepared baking pan.
  3. Bake for 30 minutes or until toothpick inserted in center comes out clean.
  4. Cool and cut into small squares. Serve with dollop of cream cheese spread.
    Cream cheese spread- Cream together 8 oz cream cheese, 1/2 C powdered sugar,  1 tsp vanilla and 2 Tbsp half and half.
