2 Tbsp fruit flavored vinegar such as peach, fig or pomegranate
3 Tbsp honey
2 Tbsp lemon or lime juice
1/4 C olive oil
salt and pepper to taste
1 C water
1/2 C chicken broth
1 C rinsed quinoa
1/2 tsp salt
5 oz package salad mix (butter lettuce blend works well)
1/4 C slivered almonds
1 avocado, diced
1 small tomato, diced
2 green onions, sliced thin
1/4 C dried apricots, diced
1/4 C golden raisins
1/2 C fresh fruit such as strawberries, apples, pears, diced
1 C diced, cooked meat such as chicken or pork
- Whisk together ingredients for vinaigrette and leave at room temperature while preparing salad.
- Bring water and broth to a boil in a medium pan. Stir in quinoa and simmer for 10 minutes. Remove from heat. Cover and let stand for 10 minutes. Fluff with a fork and let cool to room temperature.
- Toss salad mix with the rest of the salad ingredients. When ready to serve, toss with quinoa and dressing and serve immediately.
