Fig Compote

9 C fresh figs, chopped
1 C dried raisins
1 C dried cranberries
4 C sugar
1 C red wine
1/2 C balsamic vinegar (fig balsamic if available)
juice of 1 lime
1 tsp cinnamon
1 tsp vanilla

  1. Soak all ingredients in pan for 1 hour.
  2. Bring mixture to a boil then reduce to a simmer for about 45 minutes until mixture begins to thicken and condense.
  3. Seal in small jars.
