Edamame Spread

Ingredients:

Kosher salt
12 oz. fresh or frozen edamame
1/2 tsp sea salt or kosher salt
3 Tbsp olive oil
1/4 C thai basil
1 Tbsp lemon juice
1/4 C goat cheese (room temperature), sour cream or creme fresh

  1. Cook edamame in boiling salted water for 5 minutes. Drain and cool.
  2. Process all ingredients in food processor until smooth puree.
  3. Season to taste with additional salt as needed.
  4. Chill and serve with crackers or baguette slices.
