Ingredients:
Kosher salt
12 oz. fresh or frozen edamame
1/2 tsp sea salt or kosher salt
3 Tbsp olive oil
1/4 C thai basil
1 Tbsp lemon juice
1/4 C goat cheese (room temperature), sour cream or creme fresh
- Cook edamame in boiling salted water for 5 minutes. Drain and cool.
- Process all ingredients in food processor until smooth puree.
- Season to taste with additional salt as needed.
- Chill and serve with crackers or baguette slices.
