Ingredients:
1 lb ground mild Italian sausage (or use hot for a spicier version)
*Optional for spicy version-1 finely minced jalapeno pepper
5 scallions, finely chopped
2 Tbsp fresh ginger, finely chopped
4 cloves garlic, finely chopped
3 Tbsp soy sauce
3 Tbsp rice vinegar
1 package round wonton wrappers (about 50)
1. Combine meat, scallions, ginger, garlic, soy sauce and vinegar in a bowl. Cover and refrigerate for an hour or more to meld flavors.
2. Brush wonton wrapper with water and place a scant teaspoon of filling into center of wrapper. Using a dumpling press or fingers fold wrapper over filling and press edges together to seal.
3. Bring a large pot of salted water to a boil. Add about a dozen dumplings at a time and boil for 3 minutes or until cooked through. Remove with strainer to a platter and drain well.
Serve with dipping sauces such as Sriracha, Gyoza or Soy
