Classic Vinaigrette
1/2 tsp salt
1/4 tsp pepper
1 1/2 tsp Dijon mustard (coarse)
3 Tbsp champagne or other wine vinegar
1/2 C light olive oil
Put all ingredients in a jar and whisk briskly until emulsified. Best when used at room temperature.
