Ingredients:
24 stems small swiss chard (if thick stems, remove before cooking)
3 Tbsp butter
2 garlic cloves, minced
4 Tbsp flour
1 C milk
1 C grated parmesan
1/2 C crumbled goat cheese
1/2 tsp cayenne
1/2 tsp black pepper
sliced baguette loaf
- Heat a large pot of boiling water to a boil. Add the chard and cook 10 minutes. Remove to towel and drain chard, patting to dry. Cool and chop.
- Heat butter in small pan. Add garlic and cook about 2 minutes until fragrant but not brown. Add flour and cook about a minute until bubbly. Add milk all at once whisking to incorporate. When slightly thickened, add cheeses and spices.
- Stir in chopped chard and pour into small casserole or heat proof bowl. Bake at 350º for 10 minutes or until bubbly. Serve with baguette slices.
