Chard Dip

Ingredients:

24 stems small swiss chard (if thick stems, remove before cooking)
3 Tbsp butter
2 garlic cloves, minced
4 Tbsp flour
1 C milk
1 C grated parmesan
1/2 C crumbled goat cheese
1/2 tsp cayenne
1/2 tsp black pepper
sliced baguette loaf

  1.  Heat a large pot of boiling water to a boil. Add the chard and cook 10 minutes. Remove to towel and drain chard, patting to dry. Cool and chop.
  2. Heat butter in small pan. Add garlic and cook about 2 minutes until fragrant but not brown. Add flour and cook about a minute until bubbly. Add milk all at once whisking to incorporate. When slightly thickened, add cheeses and spices.
  3.  Stir in chopped chard and pour into small casserole or heat proof bowl. Bake at 350º for 10 minutes or until bubbly. Serve with baguette slices.
