Blue Madeleines

Ingredients:

5 Tbsp butter
2 Tbsp honey (or 2 Tbsp sugar)
1 egg
1/4 tsp salt
1/2 tsp baking powder
1/8 tsp baking soda
1/2 C blue cornmeal (or white)
3/4 C flour
1 C buttermilk

  1. Cream butter and honey. Add egg and mix until just incorporated.
  2. Combine salt, baking powder, baking soda, cornmeal and flour. Add the dry ingredients to the butter mixture alternately with buttermilk.
  3. Spray the madeleine pan with cooking spray and fill molds halfway with batter.
  4. Bake at 350ยบ for 10 minutes or until golden and set. Invert onto cooling racks. Makes 18 madeleines.
