5 Tbsp butter
2 Tbsp honey (or 2 Tbsp sugar)
1/4 tsp salt
1/2 tsp baking powder
1/8 tsp baking soda
1/2 C blue cornmeal (or white)
3/4 C flour
1 C buttermilk
- Cream butter and honey. Add egg and mix until just incorporated.
- Combine salt, baking powder, baking soda, cornmeal and flour. Add the dry ingredients to the butter mixture alternately with buttermilk.
- Spray the madeleine pan with cooking spray and fill molds halfway with batter.
- Bake at 350º for 10 minutes or until golden and set. Invert onto cooling racks. Makes 18 madeleines.
