1 1/4 C sugar
1/2 C butter, room temperature
3 Tbsp oil
1 tsp vanilla
1 C mashed, ripe banana
2 C flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 C chopped peanuts or walnuts
1/2 tsp cinnamon plus 2 Tbsp sugar
- Beat sugar, butter and oil until light and fluffy. Add vanilla, eggs and bananas.
- Combine flour, baking powder, salt and baking soda. Beat into sugar mixture. Stir in nuts.
- Drop by teaspoonfuls onto greased cookie sheets. Sprinkle cinnamon sugar mixture over tops of cookies.
- Bake at 400º for 10 minutes until lightly browned.
